SUMMER
ON THE ALP

In summer, the Lüsner Alp around the Kreuzwiesenalm hut is buzzing with life: as soon as the snow melts and the meadows start to bloom, we take our cows to the Alpine pastures, where they can graze the best herbs and grasses that give our milk and cheese their rich, wonderful flavour. The air fills with the ringing of cowbells and the scent of freshly mown grass, while our dairy is in full activity. We live in harmony with nature, like our forefathers did for generations before us. This is what makes Zalnerhof the ideal summer destination for anyone seeking peace, quiet and freedom. CHARACTER AND QUALITY
OUR PRODUCTS

The milk from our cows has such a rich, natural flavour because we let them graze freely in the Alpine pastures – no silage, just excellent quality. As a result, both our milk and our dairy products are packed with precious nutrients such as healthy omega-3 fatty acids. Additionally, they are more easily digested compared to conventional dairy products, due to the unique properties of Braunvieh cow’s milk. This is why our cheeses are a joy for the gut as well as for the palate. Visit our dairy farm and discover how tradition, nature and modern indulgence can go hand in hand.

Graukas – the authentic
Tyrolean grey cheese is not for the faint of palate. This acid-curd cheese made from raw skimmed cow’s milk has a fatty texture and a flavour that is as strong as it is authentic. It is traditionally enjoyed with onions, vinegar and oil – a true South Tyrolean original! After maturing for 14 days, it develops its full character, guaranteeing a memorable experience for the palate.
Ziggokas – the rustic
Ziggokas is an original Lüsner product – cheese art at its purest! Made from skimmed raw Alpine milk, this cone-shaped acid-curd cheese has an intense flavour and a dry, crumbly core. Whether you eat it the traditional way, i.e. with Alpine butter, or with a more contemporary twist adding onions, vinegar and oil, Ziggokas is a cheese that combines history and indulgence. It takes about 2 to 3 weeks to mature to delectable perfection.
Fresh cheese – the light
Creamy and with a mild, refreshing taste, our fresh cheese is a great all-rounder. Whether you eat it plain on its own, add fresh herbs or use it as a topping for your salad, it will add a summery note to your meal. This rennet-set cheese is not matured and goes straight from the cheese dairy to your table.
Woachkas – the wild
Made from raw Alpine milk, our soft cheese starts out mild and slightly sour, but becomes racier as it matures. With its irregular natural rind and a hint of mould, it is as strong in character as the mountains it comes from. It takes 20 to 60 days to mature and acquire the intense, spicy taste for which it is renowned.
Lissna Almkas – the all-rounder
We are sure that our Lissna semi-hard cheese will conquer your palate: savoury, light and with a tangy raw milk flavour, it displays an initial gentle sourness that later develops into a full-bodied, spicy flavour as the maturing progresses (50 days to 10 months).
Zirmkas – the wood-flavoured
For those looking for something unique, this is a must: this Alpine cheese is flavoured with pine needles and pine oil from the woods of Lüsen. Its woody aroma makes it truly special.
Lissna Bergkas – the strong
Strong, full-bodied and simply unmistakable – Lissna Bergkas is a hard cheese with a distinctive character. It is hand-scooped from partially skimmed raw Alpine milk and left to mature for 10 to 16 months so as to develop its spicy, crumbly texture and a smeared natural rind. Perfect for true cheese lovers who appreciate the intense flavour of the mountains.
Yogurt – the creamy

Alpine butter – the velvety
Our Alpine butter is sheer delight – smooth, creamy and full of flavour, it’s handmade from fresh hay milk. Spread it on butter to savour all the scents and richness of the Lüsen Alpine meadows.
